POKOTABI / Sushisyou Suzuki
すし匠・寿〃木
Located in Igusa, Sushisho Suzuki pairs meticulously prepared seasonal fish with its distinctive barley-blended shari, offering lunch sets and an evening omakase best enjoyed by advance reservation.
01 / ABOUT THE PLACE
As each piece of nigiri gently yields in the mouth, a subtle, light pop of texture emerges from the rice beneath. Set in a residential pocket of Igusa, Suginami Ward, Sushisho Suzuki (すし匠・寿〃木) distinguishes its sushi with a house-style shari blended with barley, incorporated with health in mind. This gentle base provides a lingering finish that cradles carefully prepared seasonal toppings, from umami-rich kombu-cured white fish to simmered conger eel.
The midday menu offers standard, superior, and deluxe nigiri sets (nami, jo, and toku-jo), served in a calm setting with limited seating that allows diners to savor Edomae sushi at an unhurried pace. In the evening, the restaurant shifts to a reservation-based omakase course, alternating between small seasonal dishes and nigiri to highlight the peak flavors of the season. A beverage selection featuring sake, beer, shochu, and wine offers well-matched pairings to accompany each stage of the meal.
The dining room is an intimate, quiet space arranged around counter seating along with table options. Because the chef crafts each serving attentively for individual guests, booking in advance is strongly recommended for both lunch and dinner. Payment is cash-only, making it a place to visit well-prepared when you want to take your time and appreciate the focused craft behind every piece.
